Absinthe
Absinthe is distilled with wormwood, green anise and fennel, and its green colour comes from the chlorophyll of herbs steeped in the spirit after distillation. Water poured into it turns the spirit milky as the anise oils fall out of solution, and in perfume absinthe reads as bitter herbs and licorice sweetness over a cold alcoholic bite.
