Balsam Fir
Balsam fir, the classic Christmas tree of North America, stores an aromatic oleoresin in blisters on its bark, the Canada balsam once used to mount microscope slides. Its needles give a crisp, needle-fresh oil, while the absolute made from the resin is sweet, fruity and almost jam-like, which lets the note bridge woody, ambery and even gourmand accords.
