barley

Barley reaches the nose mostly through what is done to it. Malted and kilned for beer and whisky, it smells of biscuit and toast, and roasted whole for the barley teas of Japan and Korea it turns nutty and coffee-like. In perfume barley stays warm and grainy, a malty sweetness less bready than wheat, suited to rustic gourmands and pipe-tobacco accords.
