holly
Yerba mate is a holly, Ilex paraguariensis, and its dried leaves, often cured over smoke, give the genus its best-known smell, grassy, bitter and tobacco-tinged. A holly note is waxy and leafy green, with that same bitterness pushed toward the glossy evergreen leaf, a sharp green that cuts through the resin and spice of winter compositions.
