Oregano
Oregano's bite comes from carvacrol, a phenol close to the thymol of thyme, and its oil is pungent, spicy and savoury, so tied to the kitchen that perfume uses it only in traces, at the aromatic fringe of herbal compositions. The Mexican oregano of Latin American cooking comes from another plant altogether, a Lippia of the verbena family, with a more citrusy smell.
