In Jean-Claude Ellena's 2007 fougère, the sun-dried coumarin of hay joins lavender in the partnership that built the family, grass and herb softening each other in the base. Licorice sweetens them with the anise of old-fashioned confectionery, and its rooty side keeps the sugar green and herbal.
