Cherry Blossom
Sheer, powdery and softly almond-sweet, the cherry blossom note is a pastel image of spring, since the ornamental cherries of Japan offer little scent of their own. The sweet, almond-and-hay part has a real source in the salted cherry leaves wrapped around sweets such as sakura mochi, which release coumarin as they cure, the flavour behind Japanese sakura confectionery.
