green almond

Green almonds are the young fruit picked in spring before the shell hardens, eaten whole, fuzzy hull and all, often with salt, in Iran, Turkey and around the eastern Mediterranean. Their smell is sappy, tart and green around a milky, jelly-soft kernel that tastes only mildly of almond, so the note sits closer to fig leaf and green notes than to the marzipan of the gourmand almond.
