Mexican Vanilla
Vanilla is native to Mexico, where the Totonac people of the Gulf coast cultivated the orchid long before plantations spread to the islands of the Indian Ocean. Mexican beans come from the same species as Madagascar's bourbon vanilla, yet they are generally described as spicier and woodier, and the note is pitched darker than a plain vanilla, more resinous and spiced.
