Tonka beans are traditionally cured by soaking them in rum or another spirit and drying them again, and as they dry, coumarin creeps to the surface as a pale frost of crystals. Pastry kitchens grate the beans like nutmeg over custards and chocolate, and the absolute used in perfume is rounder and more caramel-like than pure coumarin, soft enough to linger in the base for hours.
